There are intel specs and limits. Then there are limits users choose to push hardware too.

There's no universal answer for what you're asking. Simply because of the fact that every setup is different. You have to test on your own and see what kind of temps you see. Then decide what you feel comfortable with.

I have a high heat leakage i7-920. Doesn't need much voltage to stabilize but runs hot as BALLS. Intel says 75c and 1.375v vcore is safe. I see 75c at only 1.25v. But I feel comfortable pushing temps into high 90s, that's when vcore is around 1.4v. But that's just me.

And quite honestly I feel like i7 cpus are quite strong to begin with. So short periods of abuse I feel does not degrade the chip at all. And like you said since real world use doesn't put nearly as much stress on the chip I feel it's okay. Think about what you feel comfortable with.
