When I disabled volume cache my system does not feel as "snappy", seriously. And no, it ain't placebo. I'll use it for a few days diabled, turn it on and things are back as they should be. So, I don't know what the deal with max IOPS is, but I know what I feel, and I feel I should have it enabled.
On HDD's you are right, it will add some feeling of a faster system, on SSD however, the WriteBack Cache just cant keep up with the Intel drives. It might also aid some other brands of SSD's, just not the Intel SSD's...
