A Gigabyte GA-EP45-UD3(P) also beats a Gigabyte GA-EP45-Extreme in regards to ocing and is 100€ cheaper... still the UD3 is a mid-end board and the Extreme is a highend board with its price...

That's done on purpose yes, by the same brand.

Now lets compare the Foxconn vs DFI or Asus. Foxconn was way overpriced while DFI and Asus were at least the same quality and offered the same features. I mean, DFI is in 99.99% already a top end board, what extra features should we look at? 299 more USB 2.0 ports? Big ass heat sinks with fancy colours having no purpose? The most advanced feature you want to have is a well laid-out BIOS, SB750 and thus ACC. Although Ive to admit the DFI would have been more fun if it had more phases though. But then take Asus instead, 20Euro more and also gives everything.

At some point there's a difference between advanced features and extra's and as you said, gimmicks. Extra gimmick does not mean it's a top end board, you just pay for it.
