i) The motherboards RAID is fine. And it's simple to do, tho you will have to install Windows using the RAID drivers. Or you can use the 2 orange SATA ports and they will automatically RAID0 the two drives for you.

ii) Yes you can make partitions on RAID.

You will get twice the size of the smallest drive, so yeah two 320gb drives will get you about 600gb of usable space.
