Yes you just can't do as you have planned......On 975 and ATI's were different though.......You knew were your CPU goes, were your (each) VGA goes and combined them all together, you were ready....With this i680 chipset, things are crazy.......I don't know....!....Sorry to hear, but same happened here in our last LN2 QX6700 + 8800 GTX SLI session, the problem was CPU. When we finally managed to run it at 4511 MHz (still poor clocks) and installed 8800 GTX SLI, CPU didn't work with high clocks anymore. And CPU + 2 x VGA consumes quite alot LN2. I'll also do some testing after Cebit but VGA clocks are not currently as impressive as yours (865/1165)
