The non K wont run unlimited tao so they are useless for gaming. If you run the 8700k at 4.8ghz all core it should be faster than the 12600 non k that looks to run at 4600mhz all core after the 200mhz extra expires after 15-30seconds, and will go lower if the specs are accurate and you cannot override turbo power limits.

The gains are just not there for the cost, and you will need a new board with the next gen.
