It's not dual channel that makes it 1600, it's dual data rate. 800mhz is correct cause that is the ddr clock rate. Commands are sent only on one side of the clock whereas data is sent on both sides of the clock, hence the DDR.
As far as AVX temperatures, it should be no surprise why it's running hotter, you essentially are using twice the amount of ALU transistors that you would've been using in SSE. AVX has 256 bit registers whereas SSE only has 128bit registers.
