How can you guys afford to do this stuff?! When I show the forums to my friends, I'm constantly pointing out things like:

"This dude's CPU cost more than my entire PC"
"This dude's GPUs cost more than my entire PC"
"This dude's RAM cost more than my entire PC"
"This dude's motherboard cost 3 times as much as mine did"
"This dude's storage setup cost is comparable to that of a Fortune 500 company"
"This dude spent more time perfecting this case than I have playing tennis... he deserves a varsity letter!"

Have any of you guys started with budget builds and then started becoming enthusiasts?

My first build cost me $1250.00 back in 2000.

As to these high end systems it's all about what your interests are.
I don't drink, do a vacation once a year for a few days.
