wow the default voltage for 5970 is 1.049V. I got 850 to work no problem didn't see much of a boost yet. I won't push it till it's under water.

Mine HD5870 is rock stable at 850/1.10V too. Lower voltage is also possible (1.075 and 1.087), but not in demanding DX10 games. These settings are available through MSI Afterburner. They are not default for HD5870.
OK so you choose for example 1.1v through msi afterburner and select apply oc at system startup to use it all the time?

Nope. I did this (1.10V setting) only before playing 3D game that goes over 100FPS on default clocks. No need to burn additional juice.
Why, what is your stock volt? I mean my XFX 5870 XXX stock volt is 1.162and i want to test how low it can go for stock clockes (875/1300).

Cause most of the time my HD5870 is in idle (157/300) and when I intend to play demanding game I can set voltage to 1.125V for 905 MHz or 1.174 for 960MHz. Stock voltage/speed doesn't matter to me when I have full software control and temps are down.

Just as with the Radeon HD 4870 X2, there are three power phases per core, and an additional one for memory. In contrast the 5870 gets a 4+2 arrangement to play with, whereas the 5850 features a 3+2 layout. On the 5970, there are also an additional two phases at the top of the stack near the rear of the card we've yet to attribute to something specific.
So what are the safe temp zones for overclocking this baby? I've got mine stable at 950/1250 at 1.187v, fan 50%
Everest has 3 readings for this card, GPU VRM, DispIO and Shader.
The Shader gets the hottest, around 70'esh degrees.
So what are the safe temps for all 3? cuz i'm gonna aim for 1ghz core, and I don't wanna burn out the card.

Hit the reset button. Mine is 1.125 when i open Afterburner too, but if i hit reset button it jumps to 1.162V.
Please note that by default it think most (all?) will idle at 1.062 and jump up for demanding tasks.

BUT, everytime i restart and opened GPU Z, it's still 1.125, dan i'll try furmak can't touch 960, because it's v1.125

Afterburner sets any card to 1.162v when you press reset. It's the programs own default voltage for 5870 cards. The cards come with 3 different voltages: 1.125v, 1.162v and 1.175v. I'm not sure if 1.162v cards will come out anymore since the newest bios seems to be 1.175v.
I have two 5870 cards. One is with 1.125v default voltage and the other has a default of 1.175v. Verified with Gpu-Z in crossfire mode. Afterburner sets 1.162v for both cards when reset is pressed and that's just wrong.
EDIT:
1.125v card owners can also verify this by checking how the card overclocks without pressing the reset button in afterburner. It will overclock better after you press the reset button and it increases the voltage to 1.162v.
