Cause most shops and the gigabyte website say it is just a X58 chipset...

on first sight it seems just an ud5-extreme with extra chipsets for 2 sata3 ports and 2 usb3 ports

the thing is: i only need about 2 or 4 sata ports (sata3 would be nice, but it is not like i'll use it for now) cause I'll get an 8 port pci-e raid 5 controller
and also usb3 would be nice, but it alone is not really worth the extra 75 dollar compared to the normal ud5...

So if this ud7 does not make any difference in overclocking (i7 920 on water that is...) or other stuff then sata3 or usb3, then I don't think it is worth the extra price for me...
Have you read the thread at all? Its not a new chipset, its Gigabyte's update to their EX58 mobos. The differences are,
SATA 3
USB 3.0
Fixed PCIe with ability to boot over 222BCLK
Better power managment
