I was playing around with this same concept on my SB750 board yesterday. I was trying to see the lowest possible working voltage for the chip, so I disabled three cores and clocked down to 1600MHz. I was able to run at 0.800V. Full load pulled just 18W off of the 12V rail. Idle was about 13W. Now that's entertainment.
Anything less than 0.800V caused a crash, so I'd say you can probably consider that an absolute minimum. I'm hoping that gives you a perspective on usable range now, and that might help you tweak your target voltage. I think 1.1xx is pretty good, personally.
