I've got a few suggestions for you, coming from someone who built a system a few months ago and is now regretting parts of it:
Reconsider AMD/ATI graphics cards. Read everything you can on them, and you'll see that the new 4870s are the way to go.
Something I ran into with my 8800gt was the fact that you need a volt mod to realize its full potential. I attempted a hardware volt mod (soldering a variable resistor to a tiny little spec, surrounded by integral resistors) and I killed my card. If you're comfortable with that, then there's still the issue of SLI. SLI only works on an Nvidia board or a skulltrail system. Nvidia boards are notoriously bad stability wise, except for the 790i 350$ + board (I have no experience with it, though)
With the 4870s you can do a pencil mod to raise core and memory voltage so there's pretty much no chance of you killing it unless you take away too much resistance (read up on mods before you perform them, there are whole threads on ATI / Nvidia modding) Also, crossfire can be enabled on Intel chipsets which are (the vast majority of the time) better.
As for water cooling, I can help put together a list of things you'll want based on your case and budget if you'd like, or you can ask in the water cooling section and read up on what everybody else has and what works the best.
About displays - I can tell you from experience that the samsung 24" screens look fantastic, but that's your choice of course.
Uhmm.. what else.. oh - motherboard and CPU - look at the P45 and x48 chipsets. P45 has been shown to get excellent results with FSB clocking with dual cores (and I'm assuming quads as well, but I haven't really seen anything yet) Look at the biostar tpower P45 threads. And I'm pretty sure most everyone here will agree that x48 is the best overall overclocking chip. Look into the Foxconn Blackops. As for CPU - an 8500 is a great choice, though you might look into one of the higher multiplier quads while you're still planning everything.

As far as I know the newest Nvidia cards don't have a pencil mod, but you might check in the xtreme mods section. Again, all of the cards can overclock pretty far without a mod, you'll just need a voltmod if you have adequate cooling and want to go past that point.
And it's not really that people don't like Nvidia, I happen to love my 8800gt, it's just that their new cards are extremely expensive and their performance can be had for a lot less if you go with the newest ati cards.
Edit: apparently the GTX280 has a chip or something that allows for software to up the voltage to a max of 2.0v, but I'm not 100% sure about that.

and im going to trade them in.
im not sure if i should trade them in for Logitech Z 2300 or Logitech G51.
although the G51 has more speakers the Z2300's speakers have more watts in em. and so does the subwoofer. I think the Z 2300 has 120W sub and G51 has 56W sub.
but i really like the extension piece for the G51 :P. not that that REALLY matters.
Votes? Z2300 vs G51. post your opinion!
