Well, the problem is, the Gigabyte boards have a ridiculously HUGE vdrop + vdroop. It's more than most I've seen and since they limit the voltage you can set in bios to 1.6v, it actually destroys any chances of a serious overclock.

Some people get a dif of 0.05v, but other people get differences of nearly 0.1v. When I set 1.6v in the bios I get 1.57 while idle and 1.54 on full load. That's ridiculous.

If at least the volts set in the bios would be the real volts in windows, that already would help a lot as you'd only have the droop lowering your volts.
