i've always been curious to see if anyone would (has??) used a sealed container and purged with nitrogen or some other gas (argon?).

You can use many gases, but most prefer to use either CO2 or Nitrogen. The only reason I say Nitrogen is because I have an 80 cubic foot tank right here IIRC, there have been a few people that have tried this. The most recent that I've read about it is someone doing it not for DOD phase, but using chilled water. There's a thread @ XS about it, but I don't remember in which section......
