In the benchmarks that I've done Skyrim doesn't scale past two cores. Don't listen to taskmanager.
Save the game in a cpu limited area, then walk around and record it with fraps benchmarking tool, reload that save and repeat, repeat again. Then go into bios and disable two cores, repeat benchmarking. Tell me if you see any difference, I didn't.
Now if you play with clock speed the difference is massive. You can't tell me that a bulldozer cpu would feel "smoother" in Skyrim, or Fallout New Vegas, or a modded Fallout 3, or a modded Oblivion, or quite a few other games like ARMA 2 for that matter.
