Dinos, the very basic way to explain it would be that added capacitance (extra caps) gives smoother current.
Capacitors act kinda like a reservoir for electricity. They will store charge and release it as required to smooth out the current flow.
Compare it to your water cooling, a pump without a reservoir upstream will only recieve the flow that the source provides, whereas with a reservoir you are supplying a constant exact flow. When there's more water than the pump needs, it will fill the resrvoir, when there's not enough water for the pump the reservoir will make up the required water.
Hmmm, does that make sense?
