I always thought the newer ES's were those Axxxx that has the core voltage written on the bottom of the chip.
Think I have a 156 and fx60 ES on the way, tooNot 100% sure though, the company I bought them from has some problems... I keep my fingers crossed.

Won a 3500+ San Diego (a REAL SD, says BN not BW on the chip). Stepping... AABHE 0502XPMW - oldest SD I've ever seen! 1.4v btw.

I have a feeling I won a 3500+ CDBHE 0540FPMW a while ago. Not sure where it is now, maybe at some friend's house or something. Should be decent.
The 3500+ SD's were labeled VENICE for some STUPID reason lol. No idea why they would do that.

0633 EPMW is very cold buggedI testest two of them under single stage and horrible cold bug....215 MHz HTT @ -30°C so far.

Nevermind the chip, I asked the person who has selling the cpu if it was an actual picture of the cpu and it wasn't.
So far, all my world-class steppings (3000+ winnie, 3000+ Venice, 3800+ venice, 3500 winnie) come from fellow members of the 9lives forums. I'm checking eBay once in a while to find out if there are good steppings available or not. Mostly not.
