I do like those air numbers; they're basically just as good as the water and frankly hitting anything over 5ghz would finally create a worthwhile upgrade over Sandybridge. Ivy/Haswell may offer IPC improvements, but once you factor in the SBs overclocking advantage it usually worked out to $300 for a few percentage points at best.

Why TjMax in RealTemp......sometime 100 and 105C ?

TJMax for G3258 is 100, TJMax for 4790K is 105...

I think the default TJ Max is 100C for your 4790K. The Log word for the center 2 cores in one of your screen shots means your CPU reached the Thermal Throttling temperature during one of your tests and this has been logged by your CPU. When the CPU hits this temp, it will start to rapidly throttle the multiplier to keep the core temp from exceeding the maximum safe operating temperature. You need to keep it under this temperature. When stress testing, if you see Log, you should either improve your cooling or back your overclock off a little.

Then there must be some problem with this version of RealTemp. However, we got past 100 oC and the CPU didn't throttle...

Haswell has TjMax 100C (Sandy 98C, Ivy 105C)....

As I said, there are two options - either Intel moved TjMax at 105 for Devil's Canyon, either that version of RT does not read correctly.

If you use RealTemp on different processors, TJ Max will not be automatically updated. You need to either delete the RealTemp.INI configuration file when you swap processors or go into the RealTemp - Settings window and push the Defaults button so RealTemp can read the correct TJ Max value from your CPU. RealTemp 3.70 or RealTemp T|I Edition should be able to read the correct TJ Max value when you do this.

TJ Max is 100C on the 4790K screenshots that I have seen so far. The new 4th Gen Pentium is probably the same.

Nice testing. But the retail 4790Ks do not measure up to the ES 4790Ks. Not many 4790K retails can even run 4.9ghz 4/8 cpu stress tests, let alone 5.0Ghz. And that's even pushing vCore to 1.50 and vRong to 2.25.

The key to any Haswell chip is to fix intel's mistake and remove the gap between the processor core and the IHS. My i5-4670k was hitting over 90'c @ 4ghz as it came from intel. Removing the IHS, then lapping it's underside lip so it sits much lower, but not so low that the lip no longer makes contact. Then add a slathering of Coolaboratories Liquid Metal on the CPU core itself, set chip into motherboard socket, followed by putting a few dabs of "household goop" rubber adhesive on the lip you just shaved (hehe), set it into the socket, and clamp the chip and IHS together with the lever. After a few hours, give the IHS a coating of the same liquid metal and mount your cooler.

My chip is now at 4.4ghz and maxes out at around 63'c. Right now it's idling at 31'c. Oh... my cooler is an old Thermalright Venemous X that I slightly altered to make it fit properly on my LGA1150 motherboard. I am NOT using the RT version designed for my board. My cooler says it's only compatible with Socket 1366/1155/775

Not even close. According to the results AIR (extreme and standard) is either flat out better or flat out worse than water. In the case it is flat out better the comparison was made with the Enermax Liqtech 120X which is weak for an AIO and notoriously not worth the money you pay for it.
