My guess is that those temps are as low as its going to get because of your weakish 1/10 HP compressor.

Do you get some liquide return (frost until the compressor?)? If yes you can't expect to go lower if you don't increase captube length.
Anyway change the compressor, that would be nice to that nice looking system

Agreed; your compressor is your weak link. That being said, it looks like a nice little unit and an excellent step into phase change cooling.

well phase change is where i am headed but wanted to build a chiller to learn refrigeration and how to isolate my CPU so i would not mess things up well i just got my hands on a 5000/BTU A/c debating on whether or nor to start a phase change or to put the compressor in to the chiller

Lol decisions decisions, eh?
Just to save some cash I'd go with the chiller; you already have everything you need, and with a ss you'd need a new evap.
By phase change I was referring to the part of chilling that uses phase change, not to direct die systems :p. Sometimes I forget that "phase change" has come to mean strictly those.

two window units should be more than enough parts, the only thing i don't like about ac units is that they tend to be nasty and full of dead bugs and stuff =P

oh and you used a lot of copper on that desuperheating coil, you would've been fine with like two loops....

And that is were we all start. Looks like a nice clean build.
OT: BTW seems to be a XS chiller tradition that if you are of age to chill a adult beverage of your choice in a block of ice for a photo.
