An 8700k is definitely overkill for gaming. All you really need is an I5 8400, but if you want you can splurge on the 8600k but it won't really gain you much of anything. Just about any Z370 motherboard is good, just pick one with the features you want. For me I wanted two M.2 ports to run raid 0 on my SSD's, so I'm personally running the ASRock Z370 killer SLI and I think it's a really nice board for the money. I prefer MSI and ASRock. I used to like gigabyte but they screwed me last year on an RMA so I vowed I would never buy them again lol. Asus I also dislike, they are jerks too plus I have never liked just about any Asus bios layout I've ever used.
As for the ram, 16gb is currently plenty for gaming. Get yourself a decent 2x8gb kit of atleast DDR4-3000 ram, you can always get another 16gb kit later if you need. I prefer G.Skill for brand.

For the cooling on the CPU, an I5 8400 runs so cool you actually don't even need an aftermarket cooler. The I5 8600k if you want to OC will only need a decent air cooler to stay very cool. Nothing that'll break the bank, and you certainly don't need to waste money on a corsair water cooling kit. The cooler master hyper 212 EVO is like 30 bucks and would easily support an 8600k running 5ghz.

im doing an 8600k with a midrange board, and some b-die, and a decent air cooler (noctua)
