A good friend of mine attempted to watercool his Striker II Extreme and the block damaged his SB. I have a damaged Striker II Extreme with a bad NB. Anyway to remove/replace the chipset to make one good board?

It's possible but you'de need a heat gun.
I've never done such a thing though...
I'm sure its possible. Look at the process for reballing. It should be relatively similar since you need to take the southbridge (or northbridge) chip off each motherboard anyways.
For for the equipment you'll be needing to swap large bga chip you'll buy new mobo or 2.
Basicly you'll need, top heater (for the chip), bottom heater (for the whole pc), several types of flux(removing the chip, cleaning the chip and reflowing the chip back), bga reballing equipment, equipment for thermal control (heaters if they're inaccurate or they're not equipped with thermostat). Not cheap stuff.

Good luck, as S0lid said you need access to the right equipment.
My ex-brother in law owns a SMT plant here, he used to let me come in and do things like this, however hes a big d-bag now and won't give me the time of day LOL
You might find a plant in you're area, but if their busy don't expect them to be interested in such a small project.
