Well I use Google Finance a lot to watch my stocks, Shazam for music ID, Skype to talk to my sister in Italy, Zedge for random ringtones and such.
Thats all I can think of right now

I use minimal rss reader as it fits nicely in my homescreen setup. LauncherPro is also great launcher app, I have Sense and yet I use it on top of it. Not anymore tho as I switched to aosp roms last week, official development for my phone stopped at Android version 2.3.3 and I get 2.3.5 this way.
I can log on using browser app no problem, but I find Tapatalk more convenient way of browsing forums.

GasBuddy (tells you where gas is cheap in town and lets you know when gas is going up)
ElectroDroid (tells you all kinds of information about different componants, Very interesting and a must see for us geeks)

Last night I downloaded Rom toolbox, very nice tool for modifying your custom theme, and more such as all functions as rom manager, ability to change VM heap size, scan intervals for WiFi etc. Seems like a very useful tool with no ill effects as far as I can tell.
