Best way to measure CPU temp?

Hi there, just a quick Q. What would be the best way to get accurate CPU temp readings? I was looking at an infrared thermometer but that would only measure the side of the IHS?

I thought the internal temp probe was fairly accurate on an I7?

My BIOS temps are not accurate as it is impossible to get below ambient at idle. Realtemp is what I use because it gives higher temps then anything else and I figure at least I know I have head room.
