I got the same problem.
XFX Reference 5850 + Sapphire non-ref.
I know using MSI afterburner or trixx OC'ing caused crashes. But I think if you use ATI overdrive it would OC both successfully.

Any of the latest Z68 motherboards should be fine with 4x4gb modules at 1600 or 1833, more bandwidth won't be appreciable.
I'd go with 2600k, HT will be useful for a workstation and overclock nicely.

Whenever I try to simply overclock the system freezes. I'm not even trying to modify voltages....
Running 1.52-1.55Vcore 24x7 likely made it less stable.
running 3.5ghz instead of 3.6 but its all good.
