I'm collecting parts for a new build, and have narrowed my motherboard choices to the ASUS P8Z77-V Pro and the Gigabyte GA-Z77X-UD5H. I'm interested in feedback regarding how they compare in terms of quality, reliability, and stability.

Can't go wrong with either board. I ordered the GA first but it came DOA so I get the Asus board locally. The GA board seemed more substantial in terms of surface components even down to the mount for the chip. I wouldn't trade this board for it now though.
Both are good Boards. I have the ASUS P8Z77-V Pro and what I miss is that You cannot set the VTT Voltage in case You like to OC Your Memory.
In this case the Gigabyte GA-Z77X-UD5H has more Options.
The ASUS P8Z77-V Pro comes with W-Lan where for the UD5 You need to pay more money (Gigabyte GA-Z77X-UD5H-WB WiFi) to have it.
According to a Administrator (Tradesman) at G.SKILL forums the VTT is combined with VCCSA.
