I usually game at 1920 x 1080, would I notice a performance increase between a quad core or a 6-core CPU?

For gaming, most likely not.
Most games are single threaded and the ones that are multi-threaded usually don't scale past three cores or so.
If you were doing video encoding or heavy multitasking the X6 would help out.
More and more games are taking advantage of quads now, soon they will be taking advantage of more cores. So I'd say go for the hexacore if you would like to be a little more future proof.
I had this same argument going on in my mind a few years ago, i.e. should I go with a fast dual, or a basic quad. Well I wish I would have gone quad now.
x6 will most likely clock higher than c3 deneb unless it is the new denebs that a few people have seen like mad222's 5.1ghz air chip. all amd chips have date/stepping, something like 1045gpmw, if the x4 has 4 letters after the date x6 will clock higher IMO, if it has 3 letters after the date i think it will clock as high or higher than x6
with all that said go x6 :D
If you're going to overclock it, then a hexacore will clock better on the IMC which will boost your ram performance. But if you're going for a dozer/sb setup later next year than i guess a quad will suffice.
the core count dose not matter, but the thulban clocks better and has more ram clocking fun. so i would get anything thats a thulban base (there is the 970x4 if u can find it) or just wait the few months for the BD.

Get yourself a decent GPU now and do a complete overhaul next year... Do you need a hefty OC for gaming ? Nope, for gaming you don't need a 4Ghz or higher clocked CPU... being it 4 or 6 cores, high NB speed or not. The difference is inbetween the ears... I'v been testing alot of different GPU/CPUcombos... A quad core at 3.6Ghz handles everything nicely ( not talking about multiple GPU setups...) for the average gamer...
you could probably sell off your current cpu+mobo for a decent amount, enough to get a 955BE + mobo for just a little more. Where are you located OP?

My rig is outdated though, and I do feel like I need some sort of upgrade over Christmas.
I run 5 instance of my game and I am on a x4 core, I am running @ 80-90% CPU usage across all 4 cores currently.
I am curious if I had a x6 core if the load would spread across all 6 and lessen the CPU usage?
Maybe he runs a dedicated server(s) on his rig
