From what i've seen elsewhere if only 1 is running only cpu 0 is beenig stretched, but that doesn't mean that cpu 1 will take the same oc. So to verify oc stability one should probably run something like 2 super pi processes (from 2 super pi installations otherwise the processes will try to write on the same file) or say 1 super pi and 1 pcmark process running at the same time.

Beaten by dual Xeons! You definately have the advantage with memory BW but you don't want to see the cache results. The 2MB L3 in each Gallatin mops the floor with your X2.
