Went with the 5970 which just got delivered right now !
Will let you know if i face any issues at all with 3 monitors. I plan on running 3x 24's myself.

Just too many issues with CFX and Eyefinity right now; until the drivers are 100% fixed avoid CFX and Eyefinity like the plague. When ATI does get around to fixing CFX and Eyefinity they could sell some more cards; i'd consider picking up a 5970 to tri-fire with my 5870 for one.
It depends on your defintion. There are many times running 3x LCDS that the 1GB cards run out of vram with even as low as 2x AA let alone 4x. That said if you hope to run current and future games on a 3 monitor setup AND with high IQ, then 1GB simply will not be enough ( running the displays without AA should be fine most of the time )
This all depends if you want to run > 3x 1680x1050, then you will want to take a look into 2GB custom 5870s as vram *is* an issue at 3x 1920x1080/1200.
If you have Foxconn BloodRage that means you have free 4 PCIe slots and the ability to go quad crossfire if needed.
I would say a 5870 CF since the future prospects are better, if DX11 is a sticker like the DX9 you can add cards till all your 4 PCIe slots are filled, in 5970's case you can just add another 5970 and that's it.
Also i would recommend waiting for the 2GB 5870's if priced not very high they will be a better choice.
After doing some browsing on the ye olde 'net it seems that CFX and Eyefinity may never work on the 5xxx series. It seems that the bandwidth of the CFX bridge isn't enough to allow for quick enough inter-card communications to handle the large resolutions of Eyefinity resolutions. I think i'll be upgrading to a 5970 next and selling my 5870 (I use Eyefinity.)

There also seems to be a 5970 "warm bug" that users have been having their 5790s crash at around 30c so be careful if your going to try and water cool it. Jcool has a thead about it in the water cooling section.
