A Cosmos S will not hold the rads you want. If you are only doing a Core I5, and 1 GTX480 or GTX260, you don't need all that radiator. A Cosmos S can hold a 360 with no cutting to the case and a 240 with cutting to the case. If you don't want to keep everything in the case, but mount a radiator to the outside of the case, then that doesn't matter.
There are also other radiators out there that perform as good if not better than those SR-1s for cheaper. Thermochill, EK, Magicool/Swiftech, XSPC RX series are a few. Those SR-1s do look the best though. :)
You don't have to do dual loops, but you may want to do dual pumps as MB blocks do add restriction. Everyone has there personal perference on pumps. End of the day, you will be fine with a MCP-655(D5) or a MCP-355(DDC). The DDC is smaller than the D5 and less expensive. The D5 vario has a speed control built into it.
I would say to get the DDC as you will need 2 and a Cosmos S can get a little tight when watercooling. Make certain to get a pump top for the pumps too. EK, XSPC, and Koolance all make great pump tops
