Regarding the Zalman ZM-MFC1 Plus, you can connect 7W / channel. A "normal" 120 mm fan is 0.35A, so 0.35*12=4.2W, I'd say don't connect more than one, and be careful if you are using more meaty fans (Sanyo Denki 110s for instance), you may exceed the controller's capacity.
Edit: Remember that due to design (flaw IMHO) the Zalman controller will supply 11V and not 12V to your fans, unless you feed it with 13.2V (which may or not adversely affect the components). This means you will never be able to run the fans at full power.
