ok i have the choice to overclock the following with my new Vapochill i just got:

Intel Pentium 4 3.2ghz (prescott) processor >>"stable at 3.6ghz with air"
Asus P4P800 SE >> no more

or

AMD64 3000+ s754 >>"stable at 2.4ghz with air"
DFI lanparty UT 250gb

which would give me best overall system preformance

*note: all the other items i'll be using are in my sig*

Most likely the Presscott would benefit more from the xtreme cooling, due both to their high heat output and the way that P4's seem to scale so well with improved cooling.

The presscot id say. Although if it was me id give them both a go and see which one does better that way.

Keep in mind the mosfets on the 865 boards (like the P4P800) were intended for Northwoods. If you plan to push 1.55v or higher on a Pressie, make sure you sink the bejesus out of the fets and have a fan on the sinks. Even then I've seen the mosfets pop above 1.6v. Good luck :)
