Does anyone know if placing those real thin monitors between the cpu and hsink would cause an issue as far as heat release is concerned?

you will be fine if you are even still concerned just mount sensor on bottom part or side of cpu once mounted into case.

Thanks. Right now it is under the cpu. Dont think that gives a solid reading for real cpu temp. Thats more like mobo temp.

dude dont put it between the cpu and heatsink. that will fry your cpu.... tape it on the cpu and have the tip of it touching the side of the core

Yeh, figured it was a bad idea. But I still contend that a temp reading from under the chip isnt the true temp of the chip.

Id have to agree with both statements there. Underneath wouldnt be all that good Id think.
I would also suggest putting the sensor just on the side like said earlier.
