Raid?

Hello, I read about all these people putting their Harddrives in raid.. and I just ordered a neo2 platinum NF3 and was wondering if i could put my 7200rpm IDE drives into a "raid 0" with sata adaptors.. i have 3 Hd's and can I only put 2 in a raid?
