I'm a n00b to the waterchilling hobby. What I want to know is, if I manage to find an old bar fridge or normal fridge, would I be able to strip this down and use it to build a waterchiller?

I have been told that the above system is not designed to run continuous cycles, that it may blow up whilst running? Is this possible?

If I can't use a fridge what other old equipment can I use, AC unit?

Yes you can use it as a chiller.

Not blow, but destroy.. if you want use compressor from fridge
to cooling water, you must cool it with, for example, fans (12 and
larger would be good)
