Im looking to spend sub $250 on an X58 board. It will go with an i7 920 and watercooled by an Apogee XT. Im lazier these days so a billion settings doesnt interest me, but cranking up to 4Ghz without much hassle does.
So far ive considered:
eVGA X58 LE
Asus P6T
DFI LP DK X58
Foxconn Bloodrage GTI
Any recommendations?
Or should i just look at P55 for budget?

You should have a look at the GA-EX58-UD3R from gigabyte if you're okay with having only 4 RAM slots rather than 6. If you want all 6, you could have a look at the GA-EX58-UD4P from gigabyte. Both are great boards, and are really easy to overclock.

Just get a high-end mATX, costs less and packs the power of the bigger brothers. My personal favorite is Asus Rampage 2 Gene, but EVGA is also very good and you don't need to change the NB cooler.
Just check this thread (http://www.xtremesystems.org/forums/showthread.php?t=230496), leave all other mobos get Asus or Evga. There is more than enough information, the mobo's are much better than low quality fullATX.
