Currently i have 2 x 1 gb pc6400C4 with a EVGA 680 SLI A1 board. Im thinking about upgrade to PC8500 but.. my noobish question is: If I'm going to see any improvement from 800 MHZ to 1066???

Your improvements from ONLY changing the memory from 6400 to 8500 will be minimal. Probably less than 5%. To see a substantial increase in performance you will also need to increase the CPU speed.

While where on the 1066 subject..
Is it ok to run 4 x 1gb sticks of dominator ram at 1066 @ 5.5.5.15 or is it better to them at 800 with say 4.4.4.12 timings.
It says on the corsair forum that 4 x 1gb is unstable to run more that two modules at the full speed. And i should use 2 x 2048 sticks instead if i want to run them at full speed.
The thing is that im running 4 x 1 gb sticks of ram at 1066 Mhz but dont want to damage them so what should i do ???

by getting the 1066 sticks the only thing your helping is OCing rele, higher FSB available potentialy. a stock as Yellowbeard said.. not much diff. 5% if ur lucky.
