Hey there...

Well I'm having a few stability problems with my test rig when I connect the Swiftech MCW50-T to the Enermax 550W. I cannot overclock as high anymore and I noticed that my 12V rail dips to 11.47V with no load and around 11.2V under load.

Should I get a better computer PSU or should I just hook up the MCW50-T to my Astec 350W Pelt PSU which should be arriving in a few days.

Thanks.

Hook the TEC up to a seperate PSU. Yours apparently can't source enough current to power both the computer and the TEC, and if you keep running it with that much load on the 12V line, you are risking permanent damage to the PSU.

My Antec Truepower 550 stays at 11.84 +/- 0.01 consistently no matter what I throw at it... (even under no load with no pelt which I wish was a little higher).
If you got room for another PSU, it always is good idea to have separate PSU. My recommendation other wise would be Antec TrueControl 550 (so you can adjust the voltage instead of Antecs idea of safety by putting the rail at lower end of spectrum to start with).
