Hey. i`m kicking more ideas around..
Is it possible to have an 8-way RAID using 2 4-port cards? (both hopefully PCI-Express)

Not unless they're dual channel, which I haven't seen any card to be.
But, if I calculated right, a PCI-E x1 is around 300 MB/s, so x4 would be 1.2GB/s which is more than enough for an 8-disk array. (theoretically it's exactly enough for 8 disk SATA I array, and you'd need PCI-e x8 for SATA II array, but there is no chance to get those speeds with todays drives).
Whatever card you choose, try and find a ewvire that benches the card in real-world scenarios on your motherboard.
I got EX8350, and though ti would be great on my A8N32 but had nothing but trouble (and speeds that are below ATA100 :(

Kind of
1) only if the Cards support Multi card arrays
or
2) you are just duplexing the data (card 1 is a Mirror of Card 2)
