How loud does a condenser/compressor get? Is there a way to silence them?

The condenser is the part that needs the most cooling, right? Could you sound-proof off the compressor and run quiet fans through the condenser?

There are 2 common types of compressors Reciprocating, and Rotary. It would take an act of god to find a quiet rotary, but most reciprocating compressors are pretty quiet. Danfoss's are THE queitest, and generally considered the best made compressors available. Running quiet fans (I.E. panaflos or similar) and a quiet Danfoss Recip. compressor you can get it close to a moderately quiet wc setup or even a loud air cooled setup, and the noise of the compressor is much more bareable than a loud vacuum fan imo. of course that all depends on your definition of quiet....im known to run fans that sound like vacuum cleaners and my SS phase cooler runs a rotary that even for me is way too load!

When I turn of my fans of my Mach1 (Danfoss NL11F), its pretty much silent. The compressor makes less noise then the 2pumps of my WC setup which are very silent to. Its just the condensor fan which is making all the noise here although without that fan at a decent speed my unit can,t run.

Yeap, use NL11F, it`s very quiet compressor.

Before I shipped back my dual head unit for repairs, the unit chilly1 built for me was extremely quiet, think of a small refrigerator with nothing more than a slight humm and a even slighter whoosh being audible.

There are many things in my computer that make much more noise than the system he built for me i.e. the ati oem cooler for the x1900xt or the oem fx60 heatsink.

And the colder you want your unit to be, the bigger and louder the compressor will be.
So if you´d settle for about -15 degrees celcius, you could take a BD35F.
That´s definitly the quietest compressor i´ve ever heard.
With a open case you can bearly hear it :)
A NL11F is a bit louder, but still bearable :)

I'm building my system them putting it into a chest with sound dampening galore by my design. It'll be quiet. ;)

Scroll compressors are pretty well known for their quietness. You can mount the compressor on rubber (or better, soundproofing material) to reduce noise.
