I have a 1/4HP immersion liquid chiller, once used as a flash cooler for soda. I want to remove the coil and install a direct die evap. My question is, do I need to resize the cap line if I am going to use the same refrigerant or can I just install a flex hose and say Baker evap and be good to go? The unit is gassed with R12 currently.

yes you need to change the cap. tube because you are changing the heatload that the cooler was designed for.
using a better gas with a higher boiling temp would also increase the cooling ability R12 only about -20 deg C something, and since you have it apart you mise well put 0.028 captube in and some access points to fill again
