what program would I use & how would I do the text in this:

Photoshop + a 3D modeling program or Illustrator.

Using a 3D model looks better imo.

Based on that pic it looks like they used Photoshop and Illustrator.
You type the text and do the 3D effect in Illustrator than bring it over to Photoshop for the color, shading, and any effects you want.

Alternatively you can use just Photoshop, but it doesn't look nearly as good as the other methods. Just select the type/layer you want to be 3D and hold alt while pressing the direction you want it to be 3D.
