I have Vista Ultimate (64-bit) and Windows 7 Beta. How do set it up so that I can boot to either?

Install windows 7 from vista. If you have another partition or another drive, just start the windows 7 installation in vista and follow the instructions just like you were doing any other install.

You will need to partition it in windows first, start/right click computer/manage/disk management.
I'm currently running those two OS's also. You can either partition one drive and install one OS to each partition or use separate physical drives.
Install Vista first then install 7 to the other partition or drive. When you reboot it should ask which OS you want to boot to.

You can change the partition size any time you want in windows.

I always "fixed" dualboot by simply first installing an OS, then installing an OS again but on a different partition/disk.
Then I always have the option to choose which one I wanna use in post.

windows 7 can creat a vertual partition
for example if you have Vista on C, you can creat a vertual partition from C, result will be C & D though they are actually 1 partition (C)
and install win 7 on the second one
when you logg in win 7 you will see both
when you logg in Vista (xp) you will only see C, inside it u'll see one file (the vhd file) which is all win 7
seems that win 7 will allow you to a about 20GB maximum size for the virtual partition!!!
this all is done by pressing "repair windows" when you start installing win 7
