I currently have windows server 2003. I just downloaded windows home server (free 120 trial). And then there is 2008. Whatever it is, I need it to be stable, and bootable. This is for my new media-PC...a.k.a. the lunch box :) Which one should I use?

If you have 2003 just use it.

^^ yupp if you got it use it, you likely dont need any of them since the features in them you prob wont use, no point in 2008 over 2003 if you just need an OS
you say is a media pc, do you play game, if not maybe check out mythTV or something

its gonna hold all of our music and movies so we can just play them through the TV in HD and surround. as far as gaming goes, Not too much...maybe some COD or FEAR, but not a hardcore gamer...

Windows Server 2003 pales in comparison to Server 2008. 2008 is amazing! Besides, twice I've had 2003 eat my partitions (NTFS MFTs die) but never with 2008. I personally do use 2008 for my HTPC.

If you are at concerned with compatibility, I'd say stay away from 2008 for now. At work, I decided to build my laptop with XP Pro and my desktop with 2008 x64 and have had many more compat issues installing apps on the 2008 x64 box. I even had to run 2003 in a Hyper-V virtual machine on the 2008 box in order to run a VMWare application (vCenter).
As a media server, meaning it will contain all your HDDs and store movies/tv/music, Windows Home Server is a very simple OS for that task. As a media CENTER, just use anything with XBMC. You won't regret it.
