I've done this before no problem...

I have a computer that has no need for an optical drive, it's basically a server/folding rig and thats it. I took the optical drive out of it to put in a new computer and the old computer won't boot into windows now.

WTF!?

Have you tried moving one of the hard drives on to the SATA port previously occupied by the optical drive? I have an ASUS motherboard that won't boot unless something is in either SATA_1 or SATA_2.

Makes it pretty hard to help when we have no idea what kind of system you're running though ;)

check your boot order make your os drive first on the hdd list, and make the boot order to check hard drives first.

I had PCs reset on me if just the basic, low power system is paired on a powerful PSU.
example: my low power NAS server resets if it has only 1hdd connected. It works fine with at least 3hdd. Just adding a CD in the DVD drive works:D

It's an IDE drive. :p:

And yes, boot priority is set to HDD's first.

The board is the DFI LanParty NF4 Ultra-D.
