Is it? If not, what do you guys consider to be the bare minimum?

If its an very good quality one (able to withstand full capacity tests within specs, from credible reviewers), it should handle it no problem, along with an quad, a few HDD's etc...everything OC'ed (no sub zero extreme OC).

Reputable brand like Seasonic or Corsair, it should be ok. I would step it up to 600w or 650w if you have a quad or plan on overclocking everything.

Would a Corsair HX620 be able to handle a pair of 4870s?

Yep, but you'll need 2 PCI-E adapters.

if you're going to buy one.... save some money and get a corsair tx750.. more power, huge 60amp single rail and 4 pcie connectors. and you'll save $30 over the hx620.
