I think its time I move over to DDR3, I don't see the prices dropping too dramatically in the next couple of months or so. I'm sure prices will drop, but not substantially enough to make a huge difference. (in the UK at least) Please correct me if I'm wrong.

I would like 4GB or more. So far, price wise & spec wise the following kit is under consideration:
Patriot 2GB PC3-12800 Viper Extreme Performance (2x1GB) (http://patriotmem.com/products/detailp.jsp?prodline=5&catid=18&prodgroupid=72&id=670&type=1)

Suggestions on boards is also required. I was thinking Asus Maximus Extreme, (I'm fed up of waiting for the Rampage Extreme)

I will definitely upgrade board & CPU when Nehalem arrives, I would like to carry the DDR3 I buy now over to Nehalem, then no more upgrades for a whole year. (besides maybe GPU)

Should I be looking at higher spec RAM, or will PC3-12800 be enough for Nehalem? Is it a good choice of RAM
Any other boards or kits I should consider?

all help appreciated.

This kit features Micron D9GTR/D9GTS chips, so it's a good call.
Maximum overclock depends on your skills and luck.

I'd say DDR3-1800 8-7-6-21 is a safe bet for most D9GTR/D9GTS kits nowadays.

i have two gigs of that same Viper Patriot Extreme and all's well on my end. i agree that DDR3 1600 is the sweet spot right now. better to get the fast stuff and run a 1:2 ratio; DDR3 1066 just seems like a waste of money to me. if you know what you're doing, you should be able to get that Patriot to 1800 and beyond if you need to.
