Alright, so I'm looking at getting an Antec 900 case so as you might know the PSU is on the bottom which presents a cabling problem. My 2 choices are the OCZ GameXStream 700W or the PCP&C Silencer 750W Quad.

I'm very sure that the OCZ GameXStream 700W PSU's cables are long enough to manage without many issues. But my problem with this PSU is that it's fan does not point out side of the case... They point right at the video card (Which I will have 2 with SLI)

Now for the PCP&C, it's fans don't point at the GPU, but a reviewer on NewEgg said the cables were a little stretch to connect the CPU (it would have to go around the graphics card...).

Thanks in advance!

im using the pc power and cooling 750w myself. the ocz is good but i think the pc power and cooling is better. as far as the cables for the cpu go i don't know why anyone would have a problem with it. i am using a mid tower and the cpu power on the mobo is probualy and inch away from the power supply and the cable is so long that i had to route it halfway around my case and back to connect it.

So it should be long enough to reach the CPU connector and ATX connector on the 780i?

I would strongly consider the PCP&C version over the OCZ. The gameXstream can produce ripple that falls outside ATX specifications at higher loads which is something to be wary of especially considering your SLi setup.

what case you got? cant see cable length being an issue in a mid tower...
Antec 900 case re psu position: bottom left right up down no matter the mid tower case is only so big. :)

I belive that is everything. This is my first build so if there is anything else I need to worry about or buy please let me know. PS cable extension since RC-690 has bottom mounted PSU? Cable adapters?

I have the Silencer 750 and a bottom-mounted PSU case, and mine cables all reach just fine. I'm not sure if the 610 has the same cable lengths, but figured I'd mention it anyway.
