Sorry for the noob question, but I'm interested in upgrading to a HD3870 vid card.
Now the specs say it's got a 2560*1600 pixel max resolution
So my question is: in a dual monitor setup can it do 2560*1600 on both monitors simultaneously..?

Yes. :)
It can simultaneously show the desktop twice* (at the max resolution you posted) on both monitors you have connected to it.
*Or as "extended desktop": the desktop on the leftside monitor is stretched spreading over the second (rightside) monitor. (2560*1600 x 2 as well)

i could be wrong, but i'm pretty sure the resolution of 2560x1600 is limited by the DVI connector, not the video card itself. therefore, you can run 2560x1600 multiplied by the number of DVI connectors you have. i've hooked up two 22" monitors to my video cards before and run stretched desktop mode at 3360x1050 resolution, so i know it works.
