you just have to "Know" that its in dual channel. I have yet to find any program that properly detects it as being dc.

If you have the memory in the right dimmslots, then your running DC i think.
But i can't say for sure but some bioses can say on post if your running DC or not.
Otherwise you can test the same settings with one memory stick running 3dmark, then put in your second memory in the right slot it's supose tho be DC. Then run 3dmark again. If it is running DC mode you should gain some points in 3dmark.
Sisoft Sandra canot say if your running Dual Channel on an nForce2 board or not.
no program is currently designed to recognise DCDDR as of yet, when the next verison of Sandra is released, hopefully it will

Run memory benchmark with a single dimm. Insert other dimm and run it again. If there is a big improvement you're in dc. :D
