Okay, this isn't extreme (or xtreme...) overclocking, but oh well.
My 7900gs' pushed 725MHz when I benched, I got a nice 7500 3dmark 06 with an e6400 @ 2400 that wouldn't go any higher than 2400 (look at sig, crappy board)... Then, it stopped working 2 days later. I put it at 700. Worked for 3 hours. Put it down to 650. Worked fine for a week. Stopped working. I put it at 600. Stopped working yesterday. It was stuck on 600, I couldn't put it down anymore. Then I downloaded powerstrip and UNDERclocked it to 371MHz. Still screwed. I left the window open, let it cool to like 25C, then tried again. I got like 20 bsods!!! Then I took out my case fan (120mm), and took out my other 7900gs. I put the fan in its place, and it was getting pretty cold. I was finally able to open the nvidia control panel without getting bsoded. I turned it to 300MHz, finally stable. 10 minutes later, my board refused to let my e6400 run at 2400, so I put it back to the pathetic old 2133 CAN ANYONE TELL ME WTF IS WRONG WITH MY HARDWARE??? I AM SO F***ING ANGRY AT THIS THING!!!

The PSU seems kind of weak to be running all that. That could be the issue though the info you gave points to a number of possibilities.

Using some online power consumption calculator, and some estimating, I figured my setup needs 400W, which is handdlable

With or without the o/c on cpu and vid.cards?

Power consumption estimators are not always accurate ;)
